            Kaeng khae hoi or kaeng khao khua hoi requires the same ingredients as kaeng khae except for using snails instead of chicken. Roasted ground rice will thicken the liquid part.
 
Ingredients
1. Fresh water snails400 Gm.
2. Roasted ground rice1/2 Cup
3. Ivy gourd1/2 Cup
4. Pepper vine1/2 Cup
5. Cha om (Acacia insuavis)1/2 Cup
6. Long beans1/4 Cup
7. Long eggplant1/4 Cup
8. Berry eggplant1/4 Cup
9. Coconut heart1/4 Cup
10. Bird chili3 0
11. Kapok flowers10 0
12. Galangal4 Knobs
13. Lemongrass1 Stalk
14. Chopped Coriander1 Tbsp.
15. Chopped Spring onion1 Tbsp.
16. Vegetable oil3 Tbsp.

1. Wash snails carefully and chop off the pointed ends.
2. Pound together chili paste ingredients until pulverized
3. Stir fry chili paste in hot oil to release the aroma.
4. Add snails and fry. Add water and simmer until cooked.
5. Add smashed pieces of lemongrass and galangal.
6. Add vegetables and stir.
7. Bring to a second boil and add ground rice. When vegetables are cooked, remove from heat.
 
Tips
Soak snails in water and add some smashed bird chilies for snails to release soil particles.
