            Phat Mi Khanom Chin or Khao MI or Khua Mi is a snack made from wet rice noodles mixed with sugar and dark soy sauce and stir-fried in vegetable oil. It goes well with pickled mustard greens and crispy pork rinds. (Ladda Kanthachin, personal communication, June 29, 2007)
 
Ingredients
1. Wet rice noodles1 Kg.
2. Brown sugar 3 Tbsp.
3. Black soy sauce2 Tbsp.
4. Salt1 Tsp.
5. Crushed Garlic1 Tbsp.
6. Vegetable oil1/2 Cup
7. Fried Garlic2 Tbsp.
8. Red Chili spur pepper1 0
9. Coriander1 Tbsp.
10. Spring onion1 Tbsp.
Side
1. Pickled mustard greens
2. Crispy pork rind

1. Dissolve brown sugar in a little water and mix with wet rice noodles.
2. Add dark soy sauce and salt.
3. Blend well.
4. Fry garlic in a little oil until golden brown.
5. Stir fry until thoroughly heated. Remove from heat.
 
Tips
The rice noodles should be mixed with the other ingredients before stir frying.

Select wet rice noodles that are thick and stringy
