            To make tam makhuea or tam ba khuea all the ingredients are pounded and mixed in a mortar just like other kinds of “tam” dishes. It goes well with hard boiled eggs, mint leaves and or lemon-scented basil (manglak) or hoary basil. (Panthira Kanthakalang, personal communication, June 20, 2007)

4. Chopped Spring onion1 Tbsp.
5. Roasted Chili spur pepper1 0
6. Roasted Garlic5 Cloves
7. Roasted Shallots5 0
8. Grilled Shrimp paste1/2 Tbsp.
9. Grilled Fermented fish1/2 Tbsp.

1. Pound together garlic, shallots, fish and shrimp paste to pulverize.
2. Add egg plants and pound lightly to mix well. Serve with hard boiled egg and mint leaves.
 
Tips
All the ingredients are grilled or roasted to release the pleasant aroma.
