Aep i-huak Information of Expert

            I-huak refers to baby frogs in the early stage. Tadpoles can be used in aep, namphrik and kaeng no mai dong (pickled bamboo soup). The method for making aep i-huak is similar to that of other kinds of aep in which the mixture is cooked by grilling on a low fire until done. Ingredients
1. Tadpoles200 Gm.
2. Ginger1/2 Cup
Curry
1. Bird chili20 0
2. Shallots10 0
3. Garlic20 Cloves
4. Sliced Lemongrass2 Tbsp.
5. Sliced Galangal2 Tbsp.
6. Sliced Tumeric 1 Tbsp.
7. Shrimp paste1/2 Tbsp.
8. Salt1/2 Tsp.

1. Pound together all the ingredients for shrimp paste to a fine paste.
2. Wash tadpoles very clean and mix into the chili paste.
3. Add finely sliced ginger leaves
4. Place 2-3 tbsp. of the mixture on 2 layers (8” wide) banana leaves.
5. Fold both ends and secure with toothpicks
6. Grill on a low fire
7. Constantly turn for 30—45 minutes until the leaves turn brown and become crisp.
 
Tips
Clean the inside of the tadpoles rubbing some ashes on the hand will make it easier to press the waste out of the intestine of the tadpoles.
