            Some recipes call for one beaten egg to be added at the last minute of cooking. It goes well with fresh or roasted chilies. (Siwan Chamrat, personal communication, June 14, 2007)
 
Ingredients
1. Amaranth (Phak Khom)100 Gm.
2. Chopped Garlic1 Tbsp.
3. Chopped Shallots1 Tbsp.
4. Shrimp paste1/2 Tbsp.
5. Boiled Fermented fish1/2 Tbsp.
6. Salt1/4 Tsp.

1. Bring water to a boil and add fermented fish, shrimp paste, garlic, shallots and salt
2. Bring to a second boil and add spinach. Stir a little.
3. When the greens are tender, turn off the fire. (2-3 minutes)
 
Tips
If you use young sprouts of Chinese spinach, you can use the entire leaf and root after washing it clean.
