Khao soi is a Muslim dish. The Chinese Muslims known as the Ho call it khao soi ho or Islamic khao soi. This is why either chicken or beef is used. (Rattana Phromphichai, 1999, p. 811) |

1. Pound ingredients for chili paste until they are pulverized.
2. Boil 1 cup coconut milk.
3. Fry chili paste in coconut milk until the aroma is released.
4. Add curry powder mixture with a little water.
5. add chicken and fry. Add a little water, palm sugar, coconut milk; cook until tender.
6. Fry noodles in hot oil until crispy
7. Boil noodles for 1 minute; rinse in cold water.

| Chicken or beef can be used. Beef should be sliced and cooked until tender before mixing into the curry. | |

| Chicken legs or thighs are the best. Beef from around the neck part is recommended if you use beef. | |
