            Kaeng phak waen with straw mushrooms is very simple as it requires no meat. The nice aroma comes from roasted green chilies. However, some people put fish in making it similar to kaeng phak kat and kaeng phak plang. Some recipes call for just roasted green chilies, no fresh chilies in the chili paste at all. (Saowapha Thakaeo, personal communication, July 4, 2007)
 
Ingredients
1. Water clover100 Gm.
2. Straw mushrooms200 Gm.
3. Roasted Green chilies2 0
Curry
1. Fresh green chilies3 0
2. Garlic5 Cloves
3. Shrimp paste1 Tbsp.

1. Pound together ingredients for chili paste until pulverized.
2. Bring water to a boil and stir in chili paste.
3. Add mushrooms and cook
4. Add water clover and bring to a boil. Remove from heat.
 
Tips
Seasoning with soy sauce will give it a better aroma than with fish sauce.
