            The young, tender seeds are used. The pork can be replaced with pork ribs or dried fish. The cooking method is similar to that of phak wan or phak sio with galangal and lemongrass added to it. (Sriwan Chamrat, personal communication, June 15, 2007)

5. Sliced Lemongrass1 Tbsp.
6. Shrimp paste1 Tbsp.
7. Boiled Fermented fish1 Tbsp.
8. Salt1 Tsp.

1. Pound ingredients for chili paste together until pulverized.
2. Stir into water and bring to a boil.
3. Add sliced pork and boil until the pork is cooked
4. Add Kurzii and cook 10-15 minutes longer.
5. Add tomatoes. Remove from heat.
 
Tips
Select tender seeds of Kurzii. They will cook in a short time and are not too tough.
