            Khao Khaeb is another kind of snack that can be kept for quite some time. It is great to serve when entertaining guests during the Northern Thai New Year, a Buddhist ordination and other festivities. (Rattana Phromphichai, 1999, p. 809) One can find it around some local markets in the upper north. (Ladda Kanthachin, personal communication, June 29, 2007)
 
Ingredients
1. Glutinous rice grains 1 Liter
2. Black Sesame 3 Tbsp.
3. Salt1 Tbsp.

1. Wash rice and soak overnight.
2. Wash rice again and grind with a grinding stone.
3. Mix the sesame seeds and salt with the resultant flour.
4. Cover the pot with a cloth sheet and boil the water. Spread the flour batter on a cloth in the shape of a circle.
5. When the flour is cooked, lift it out with a spatula.
6. Place the flour sheets on a grass thatch mat.
7. Let dry in the sun for 2 days.
8. Grill the dry sheets on a charcoal fire until lightly brown.
 
Tips
A grass thatch mat makes it easy to peel off the flour sheet.
Tips
Broken or cracked rice grains (khao ton) makes the grinding easier.
