            Namphirk i-ke has a little liquid from the lime juice and the red chilies add an attractive color to it. (Siriphorn Prongkham, personal communication, June 21, 2007; Rattana Phromphichai, 1999, p. 3258)
 
Ingredients
1. Sliced Bitter eggplant 5 0
2. Crispy pork rind50 Gm.
3. Red Bird chili5 0
4. Garlic10 Cloves
5. Shrimp paste1 Tbsp.
6. Lime juice2 Tbsp.
7. Sugar1 Tbsp.

1. Pound chilies, garlic and shrimp paste until fine.
2. Add crispy pork rind and pound further.
3. Season with sugar and lime juice.
4. Add eggplant slices and stir to mix.
 
Tips
Yellow ripened eggplants give a nice color to the sauce. Garden bird chilies (very small variety) produce a nice aroma and flavor.
