Khanom Kluay has rice flour, ripe bananas and sugar as the main ingredients. Sugar can be dissolved in water before mixing with the rest. (Taksanan Anakhapruet, personal communication, July 5, 2007)
1. Peel bananas and mix with the rice flour
2. Stir in coconut milk.
3. Mix well by hand and squeeze bananas into small pieces.
4. Add sugar and blend until dissolved.
5. Make cones from 6 wide banana leaves and secure with small toothpicks
6. Fill each cone with the batter.
7. Place a cone in each hole in the steamer
8. Top with grated coconut and steam 20 minutes.
Select well ripe bananas for a sweeter taste and a nice aroma.
