            Khua het pho or het thop has het pho or het thop as the main ingredient, which is a favorite kind of mushroom among Lanna people. This kind of mushroom can be made into different dishes such as stir fry, boiling (to eat with namphrik kha), Kaeng and ho nung (Phantira Kanthakarang, personal communication, June 19, 2007)
 
Ingredients
1. Earth star mushroom150 Gm.
2. Ground pork50 Gm.
3. Tender leaves of Tamarind10 Gm.
4. Vegetable oil2 Tbsp.
Curry
1. Dried Chili spur pepper5 0
2. Garlic5 Cloves
3. Shallots5 0
4. Shrimp paste1 Tsp.
5. Salt1/2 Tsp.

1. Wash mushrooms thoroughly and slice thinly.
2. Pound together all the ingredients for chili paste until they make a fine paste.
3. Stir fry to release a nice aroma and then add the ground pork.
4. Add mushrooms and fry until the mushrooms are cooked.
5. Stir to blend. Remove from heat.
 
Tips
Sliced Kaffir lime leaves can be substituted for tamarind leaves if one does not like it sour. Kaffir lime leaves give a nice aroma to the dish.
Tips
Select young and tender mushrooms that are white inside.
