1. Roast and discard the burnt parts or peels of the chilies, shallots and garlic and pound them together.
2. Add shrimp paste (roasted in banana leaves)
3. Add the grilled mushrooms and pound to mix well
Sprinkle a little salt on the mushrooms while grilling to enhance the flavor and aroma.
Fully open mushrooms are best for this since they are soft and tender.
