This is considered an ancient fast food. Sometimes steamed mackerel or salted pork or sun-dried salted beef can be grilled or fried and put on the rice. Some people added namphrik daeng or pickled mustard greens to it as well. Then it is called according to the ingredients added: e.g. khao bai plathu or khao bai chin haeng. Dried bird chilies can be roasted along with garlic and shallots. These are pounded together with salt and vegetable oil or pork lard to a fine paste that is spread on the rice before grilling.
