            Tam khanun or tam banun is made by pounding the boiled jackfruit with the chili paste and stir-frying it with garlic, tomatoes and kaffir lime leaves. It is served with fried garlic and fried dried chilies as well as coriander and spring onions. (Sirawit Chamrat, personal communication, June 15, 2007; Rattana Phromphichai, 1999, p. 2409)
 
Ingredients
1. Green Jack fruit400 Gm.
2. Ground pork100 Gm.
3. Kaffir lime leaves5 Leaves
4. Fried Garlic1 Tbsp.
5. Coriander1 Tbsp.
6. Spring onion1 Tbsp.
7. Fried dried Bird chili5 0
8. Vegetable oil2 Tbsp.
9. Chopped Garlic1 Tbsp.

1. Dried Bird chili15 0

1. Peel and cut green jackfruit crosswise and boil until tender, drain well.
2. Finely pound the jackfruit and set aside.
3. Pound together the ingredients for chili paste until it becomes a fine paste.
4. Brown garlic and stir fry with the chili paste.
5. Add minced pork and stir fry until well cooked.
6. Add cherry tomatoes and pulverized jackfruit. Stir fry to blend well. Add kaffir lime leaves and remove from heat.
 
Tips
Jackfruit must be boiled until tender.
Tips
Select young jackfruit with white meat and very young seeds.
