            Tadpoles are baby frogs called “i-huak” in Northern Thai dialect. They can be made as namphrik or chili sauce dip. Some people roast them in banana leaves called “aeb” or add them to pickled bamboo soup. Fresh chilies can be used as well. (Amphon Molipham, personal communication, July 6, 2007)

1. Tadpoles200 Gm.
2. Lemongrass1 Stalk
3. Roasted Chili spur pepper4 0
4. Roasted Bird chili10 0
5. Roasted Shallots5 0
6. Roasted Garlic10 Cloves
7. Salt1/2 Tsp.
8. Chopped Coriander1/2 Tbsp.
9. Chopped Spring onion1/2 Tbsp.

1. Boil tadpoles with chopped lemongrass for 15 minutes and set aside.
2. Pound chilies, garlic, shallots and salt to pulverize.
3. Add tadpoles and crush slightly to blend.
 
Tips
Lemongrass improves the flavor and odor of the tadpoles.
