Khao bai may be compared to a kind of fast food of the olden times. Instead of fish salted pork, dried salted beef, namphrik daeng or pickled mustard greens can be used. Roasted dry bird chilies and roasted garlic and shallots can be pounded together with a little salt until they are completely pulverized and then spread on the sticky rice with a little oil and wrapped or rolled in banana leaves and grilled. (Nongyao Wiriya, personal communication, July 3, 2007)
