            Khao Witu or Khao Nio-naeng or Khao i-tu or Khao mintu is simply made by mixing steamed glutinous rice with molasses and cut into square pieces after it sets and becomes dry, and then sprinkle with white sesame seeds. Some people like to eat it with grated coconut. (Rattana Chaiyanan, personal communication, June 28, 2007)
 
Ingredients
1. Glutinous rice2 Cups
2. Sugar2 Tbsp.
3. Brown sugar 1 Cup
4. White Sesame 1/2 Cup
5. Salt1 Tsp.
6. Water algae1 Cup

1 Mix water with steamed rice. Mash it a little to separate rice grains.
2 Stir in sugar, salt and brown sugar.
3 Stir on a low fire until the sugar is dissolved. Add a little water if it gets too dry.
4 Coat a tray with oil and pour the mixture in it.
5 Fill the tray to the top.
6. Sprinkle with sesame seeds and let set until almost dry.
 
Tips
Coating with oil will prevent the rice from sticking to the tray.
Sugar will make the rice translucent.
Tips
Khio-ngu rice which has a long grain is recommended.
