            Tam malako or tam ba kluay-tet or som tam (papaya pok-pok) is a popular snack or a meal by itself when eaten with sticky rice. It is called “lu ba-kluay-tet” when thin slices of papaya are merely mixed with chili paste made from dried chilies, garlic, shrimp paste and boiled fermented fish. (Rattana Phromphichai, 1999, p. 2408; Prathum Unsi, personal communication, June 25, 2007).
 
Ingredients
1. Green Papaya100 Gm.
2. Bird chili10 0
3. Garlic5 Cloves
4. Tamarind juice2 Tbsp.
5. Palm sugar1 Tbsp.
6. Roasted Peanuts2 Tbsp.
7. Boiled Fermented fish2 Tbsp.

1. Peel and shred the papaya.
2. Crush the garlic and chilies.
3. Add peanuts, sugar, fish and crush or pound lightly.
4. Add tamarind juice.
5. Add papaya and mix well.
 
Tips
Make sure the peal is completely removed to prevent a bitter taste.
