            Some people cook the mixture in a bamboo cylinder and call it “lam bon” (Rattana Phropichai, 1999, 479). In Mae Chaem District of Chiang Mai, the mixture is stuffed into bamboo without frying in oil. (Sumari Thabun, personal communication, June 24, 2007). Some people are superstitious, so they call it “bon” as it can cause an itchy effect around the mouth. Therefore, they call it “kaeng phak wan” instead. A recipe recommends air drying the areceae overnight before cooking (Rattana Phromphichai, 1999, p. 479)

1. Peel the stem of the araceae
2. Steam until it comes apart (about 30 minutes).
3. Pound chili paste ingredients together until pulverized.
4. Brown garlic in hot oil and stir fry with chili paste. Add galangal and lemongrass. Add water, tamarind juice. Add pork ears.
5. Add steamed aracear. Stir fry to blend well.
6. Add kaffir lime leaves. Stir and remove from heat.
 
Tips
Make sure araceae is steamed until it becomes mushy. Otherwise it will cause itchiness.
Tips
The best kind of arecaea is the green, fresh and tender (bon wan) which is a sweet kind. Some people use the juice of concinna (som poi) instead of tamatind juice. (Sirawit Chamrat, personal communication, June 15, 2007; Rattana Phromphichai, 1999, p. 479)
