Kaeng fak khio or kaeng kak mon is similar to kaeng om, but kaeng fak khio has some lemonella seeds in the chili paste. (Deekit Kantakalang, personal communication, June 20, 2007)
1. Pound ingredients for chili paste until pulverized.
2. Stir fry chili paste in hot oil to release the aroma and stir in chopped chicken.
3. Add stock and simmer until tender
4. Add sliced wax gourd and cook until tender. Add kaffir lime leaves. Stir and remove from heat. Add fennel, coriander and spring onions.
