            This kind of brown sugar sauce is good as a dip for such sour tasting fruit as green mangoes, mango plums or tamarind. (Prathum Unsi, personal communication, June 26, 2007)
 
Ingredients
1. Roasted dried Chili spur pepper5 0
2. Brown sugar 1 Cup
3. Garlic5 Cloves
4. Roasted Fermented fish2 Tbsp.
5. Salt1 Tsp.

1. Pound together chili, garlic, fish and salt to pulverize.
2. Bring ฝ cup of water to a boil and then stir in the chili paste
3. Add brown sugar and stir.
4. Simmer until it begins to thicken.
 
Tips
Wrap fermented fish and shrimp paste in banana leaves and grill on a low fire to obtain a nice taste an aroma.
