            Het pho or het thop among the Lanna people goes well with pickled bamboo shoots and chicken or pork. To substitute for pickled bamboo shoots, young tamarind leaves or concinna or acidum can be used. (Tianchai Suthanin, personal communication, June 19, 2007)
 
Ingredients
1. Earth star mushroom100 Gm.
2. Domestic raised chicken100 Gm.
3. Pickled bamboo shoots100 Gm.
4. Vegetable oil2 Tbsp.
5. Coriander1/2 Tbsp.
6. Spring onion1/2 Tbsp.
Curry
1. Dried Chili spur pepper5 0
2. Bird chili4 0
3. Shallots3 0
4. Garlic20 0
5. Salt1/2 Tsp.
6. Shrimp paste1/2 Tbsp.

1. Wash mushrooms carefully.
2. Pound together chili paste ingredients until pulverized.
3. Stir fry chili paste in vegetable oil. Add chicken.
4. Bring to a boil and add pickled bamboo shoots and mushrooms and cook 10-15 minutes. Stir and cook until mushrooms are tender. Remove from heat.
 
Tips
Select young mushrooms. Cut into halves and the inner part looks white. Bamboo shoots should be pickled for 2 days for best results.
