            Tam krathon or tam batuen or tam batong is made the same way as papaya or mango salad but with fresh chilies and crab extract. Bird chilies can be roasted if desired. (Prathum Unsi, personal communication, June 26, 2007)
 
Ingredients
1. Santol2 0
2. Bird chili5 0
3. Garlic5 Cloves
4. Palm sugar1 Tbsp.
5. Boiled Fermented fish2 Tbsp.
6. Crab extract1/2 Tsp.
7. Dried Shrimp1 Tbsp.

1. Soften the santol by pounding it on the table and then peel and chop into small pieces.
2. Pound garlic and chilies lightly
3. Add sugar, fish, crab extract and dried shrimp
4. Add santol and pound lightly to blend.
