1. Boil the eggs 15 minutes. Cut into 2 halves. Scoop out the egg and save the shell in perfect condition.
2. Mix together the duck eggs (hard boiled white and yolk) and pork, garlic, salt, pepper and sugar.
3. Add coriander and onion.
4. Scoop the mixture into the egg shells.
5. Heat up the vegetable oil and dip the egg shells in beaten chicken eggs and place face down in the hot oil to deep fry.
6. When the pork is cooked to a golden brown, remove from hot oil and drain on a rack.
