            Khao Khuap, Khao Kriap Wow or Khao Phong is a local sweet of the olden times. It is mentioned in a Lanna Story of Nang Uthra who was deceived by her step mother who pretended to be ill and placed Khao Khuap sheets under her mattress so that when she made the slightest move it would produce a crackling sound as if her bones were out of place. (Rattana Phromphichai, 1999, p. 809)
 
Ingredients
1. Steamed Glutinous rice1 Liter
2. Palm sugar500 Gm.
3. Coconut cream1/2 Cup
4. Chicken egg1 0
5. Vegetable oil2 Tbsp.

1. Steam the glutinous rice and pound it in a mortar until it forms a paste: about 20 minutes.
2. Add sugar and coconut cream and pound some more
3. Boil the egg and mix the yoke in vegetable oil to coat the hand and utensils with
4. Cut a plastic sheet into 6” wide. Press 1 tbsp. of the mixture on the sheet and roll with a rolling pin.
5. Dry in the sun 1 hour.
6. Turn over the cakes and let dry for another hour.
7. Take out of the rack and let cool. Then stack them together in a bucket with a sheet of banana leaves at the bottom and on top for overnight.
8. Toast them on a charcoal stove.
 
Tips
The boiled egg yolk and oil mixture is used to coat the hand to prevent the mixture from sticking.
Tips
Pure palm sugar is recommended to make the rice chips puffy when toasting.
