            Yam sanat or yam sanap is a kind of salad with assorted kinds of vegetables. Coarsely chopped morning glory, eggplants, long beans and berry eggplants can be mixed in the same way as yam ma thua ma khuea (Sirawit Chamrat, personal communication, June 15, 2007)
 
Ingredients
1. Cha om (Acacia insuavis)1 Cup
2. Long beans1 Cup
3. Water morning glory1 Cup
4. Lead tree 1 Cup
5. Eggplant1 Cup
6. Minced pork200 Gm.
7. Shallots1 Tbsp.
8. Coriander1/2 Tbsp.
9. Spring onion1/2 Tbsp.
10. Chopped Garlic1 Tbsp.
11. Vegetable oil2 Tbsp.
Curry
1. Dried Bird chili15 0
2. Garlic10 Cloves
3. Shallots5 0
4. Galangal1 Tbsp.
5. Lemongrass1 Tbsp.
6. Shrimp paste1 Tbsp.
7. Boiled Fermented fish1 Tbsp.

1. Parboil or blanch all the green vegetables and boil the eggplant until it is soft. Coarsely chop them.
2. Pound together all the chili paste ingredients to a fine paste.
3. Brown the garlic in hot oil and stir fry with the chili paste.
4. Add minced pork and stir fry until cooked.
5. Stir in chopped vegetables and stir fry until well cooked. Remove from heat. Garnish with sliced shallots and coriander.
 
Tips
Put blanched vegetables immediately in cold water to retain their nice color.
Tips
Roasted sesame seeds can be added at the last stage of cooking. Fresh chilies can be used for chili paste.
