Crispy eggplant

            Bakhuea Phoi (Northern), bakhuea kang-kop (with thin green vein at the bottom of the fruit), bakhuea duean-chaeng (all white), (Rattana Phromphichai, 1999, p. 867), makhuea chao-phraya (Thaweethong Hongwiwat, 2004, p. 53-54)
 
            Comes in many varieties. Makhuea khio-sa-waei and makhuea chao-phraya are similar to makhuea chae (Northern) (Barbisatum Nees S.) but not as bitter. The fruit is round, greenish white. A new variety is kheo maejo: green, round fruit 2 cm. in diameter. Shrub 30-40 cm. high, 8-10 branches; harvest starts when the plant reaches 25-30 cm. Flowers are white. Fruit stem is green and small. Fruit production lasts 2 months. Yield 800-1,000 kg (Mae Jo University Faculty of Agricultural Production, Field Crops Department, Vegetable Section, 2007)
 
        
            Vitamins B1, B2, C, traces of iron and calcium. (Thawithong Hongwiwat, 2004, p. 57). The fruit can be eaten raw with namphrik or added to kaeng like kaeng phet (curry) to improve the taste and thicken the liquid as it absorbs the liquid and the flavor (Thawithong Hongwiwat, 2004, p. 54) Lanna people mostly put it in kaeng khae and kaeng ho and eat it with namphrik also.
