Namphrik makhuea thet or Namphrik ba khuea som This chili sauce is very thick. Any kind of fresh chilies will be good to use. ( Inthon Wongkut, personal communication, June 26, 2007)
1. Roast and discard the peels of dried chilies, shallots, garlic and cherry tomatoes.
2. Pound together chilies, salt, garlic and shallots to form a fine paste.
3. Add fermented fish.
4. Add tomatoes. Crush and mix well.
Roast fermented fish in banana leaves on a low fire to get a nice aroma.
